Easy Chicken Dinner

I would love to say I have beautiful photos for you to look at of this dish, but I don't and you'll have to take my word for it. I know a thing or two when it comes to cooking, so when I'm looking at my pantry around 4:00 to find something to make for dinner by 5:15, it isn't a stretch to make something yummy and healthy. This recipe isn't precise, because that's how I do it. So if you're a by the book sort of cook, then you'll need to step out that box and venture a bit.

Easy Chicken Dinner

3 Chicken breasts
4 tsp olive oil
kosher salt
cracked pepper
1/2 cup-3/4 cup Chardonnay
2 Laughing Cow cheese wedges

Get three chicken breasts. Season them on both sides with freshly cracked pepper and kosher salt. Meanwhile, heat up a saute pan on medium-high heat (12 in or big enough to fit all three chicken breasts) with about 4 teaspoons olive oil. Add your chicken breasts to pan. It should make that wonderful sizzling sound. Press down and cook for about 4-5 minutes. The best test is to check to see if it's getting that nice browned looked. Flip it to the other side and cook for an additional 4 minutes (once again--look for the browning). You want to cook it until there is no pink on the inside. I typically keep turning them to ensure it doesn't get overcooked. After it looks as if it's almost done. Turn down the heat to medium-low and add about 1/2 -3/4 cup of chardonnay and two Laughing Cow cheeses. Mix the cheese around until it has dissolved and the liquid turns creamy. You can simmer the chicken at this point. The alcohol burns off.

Serve it on brown rice or Israeli couscous, along with some asparagus.

If you're doing weight watchers it's a great healthy dinner and yummy. You could easily add sauted onions or mushrooms.
